Instructions
- Prepare the Zucchini Mixture: Place the grated zucchini in a large bowl and add the chopped red onion, flour, baking powder, kosher salt, black pepper, and whisked eggs. Mix everything thoroughly until well combined to create the fritter batter. Gently fold in the crumbled feta cheese and chopped fresh dill, distributing them evenly throughout the mixture.
- Heat the Pan and Oil: Heat 1/4 cup of the canola or grapeseed oil along with 1 tablespoon of butter in a large cast iron or non-stick skillet over medium heat. Allow the butter and oil to become hot but not smoking to ensure even frying and a crispy exterior.
- Cook the Fritters: Using a spoon, scoop about 1/4 cup of the zucchini batter for each fritter into the skillet, carefully shaping it into a round pancake. Depending on pan size, cook 2-3 fritters at a time without overcrowding the pan. Cook for 3 to 4 minutes on the first side until the bottoms are golden brown and crispy. Flip gently and cook for an additional 2 to 3 minutes on the other side until cooked through and golden.
