Description

A quick and refreshing White Bean and Tuna Salad combining creamy cannellini beans, protein-rich albacore tuna, fresh herbs, and a zesty lemon dressing. This no-cook, wholesome salad is perfect for sandwiches, crackers, or served atop greens for a light and nutritious meal.


Ingredients

  • 1 can (15.5 ounces) cannellini beans (white beans, drained and rinsed)
  • 2 cans (5 ounces each) Chunk White Albacore Tuna in Water
  • 1/4 sweet onion, finely chopped
  • 1/2 cup fresh Italian parsley, chopped (or substitute with dill, basil, or chives)
  • 2 celery stalks, chopped

Dressing

  • 1 lemon, juiced
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon sumac or za'atar (optional)
  • Salt and pepper, to taste


Instructions

  1. Mash Beans (Optional): In a medium bowl, partially mash half of the white beans using the back of a spoon or a potato masher to add texture and creaminess to the salad.
  2. Combine Ingredients: In a large mixing bowl, combine the remaining whole white beans, the mashed beans, drained tuna, finely chopped sweet onion, chopped Italian parsley, and chopped celery. Mix gently to blend all components without breaking the tuna too much.
  3. Add Dressing: Pour the juice of one lemon, 2 tablespoons of extra virgin olive oil, and the optional teaspoon of sumac or za'atar into the bowl. Season with salt and freshly ground pepper to taste. Stir gently until the salad ingredients are evenly coated with the dressing.
  4. Serve: Serve the salad chilled or at room temperature. It pairs wonderfully in sandwiches, atop crackers, or served on a bed of fresh spinach or arugula for a light, healthy meal.

  • For added texture and flavor, you can toast some pine nuts or add chopped olives.
