Ingredients
Rice Base
- 2 cups cooked white rice, sushi rice, or brown rice
- 1 tablespoon vegetable oil
- 1/2 tablespoon rice vinegar
- 1 teaspoon kosher salt
Marinated Watermelon
- 4 cups chopped seedless watermelon
- 2 tablespoons soy sauce
- 1 teaspoon rice vinegar
- 1 teaspoon sesame oil
- 1 teaspoon kosher salt
Additional Toppings
- 1 cup cooked edamame
- 2 small cucumbers, cut into matchsticks
- 1 large avocado, diced
- 2 small yellow mangoes, diced
- 1/4 cup chopped green onions
Sauce
- 2 tablespoons mayonnaise (vegan, if desired)
- 2 tablespoons sriracha
Optional Garnishes
- Pickled sushi ginger
- A pinch of white and black sesame seeds
- Thinly sliced nori
- 1/4 cup of sprouts
Instructions
- Prepare the rice base: In a bowl, whisk together vegetable oil, rice vinegar, and kosher salt. Drizzle this mixture evenly over the cooked rice and toss gently until the rice is fully coated and flavorful.
- Marinate the watermelon: In another bowl, combine soy sauce, rice vinegar, sesame oil, and kosher salt. Whisk well to blend. Pour this marinade over the chopped seedless watermelon and gently stir to coat the watermelon pieces evenly. Let it marinate for 10 minutes to absorb the flavors.
- Prep fruits, vegetables, and sauce: While the watermelon marinates, prepare the edamame, cucumbers, avocado, and mango by cutting as described. Whisk together mayonnaise and sriracha to create the spicy mayo sauce.
- Assemble the poke bowls: Divide the seasoned rice evenly among four bowls as the base layer. Add a quarter of the marinated watermelon to each bowl, then add edamame, cucumber matchsticks, diced avocado, and diced mango in equal portions atop the rice.
- Add garnishes and sauce: Sprinkle chopped green onions and thinly sliced nori over each bowl. Drizzle the spicy mayo sauce generously across the top for added creaminess and heat.
- Finish with optional toppings and serve: If desired, add pickled sushi ginger, a pinch of mixed sesame seeds, and sprouts for extra flavor and texture. Serve immediately to enjoy the fresh and vibrant flavors.
Notes
- Use sushi rice for the most authentic texture, but brown rice works well for a healthier twist.
- Adjust sriracha quantity in the mayo for desired spice level.
- Allow watermelon to marinate for 10 minutes to maximize flavor absorption without sogginess.
- For a vegan version, ensure the mayonnaise is plant-based.
- The poke bowl is best served fresh; avoid letting it sit too long to maintain texture and freshness.
