Description

These watermelon cake donuts are a fun and summery dessert made quickly using boxed white cake mix. They feature a green cake base to resemble a watermelon rind and pink frosting topped with miniature chocolate chips to mimic watermelon seeds, creating a playful and colorful treat perfect for summer gatherings or celebrations.

Ingredients

Cake Batter

  • 1 box white cake mix (requires oil, eggs, and water as per package instructions)
  • Green liquid gel food coloring (a few drops, to achieve desired green shade)
  • Non-stick cooking spray (for greasing the donut mold)

Frosting and Toppings

  • 1 tub vanilla frosting
  • Pink liquid gel food coloring (a couple of drops, for coloring the frosting)
  • Miniature chocolate chips (for watermelon seed decoration)

Equipment

  • Silicone donut mold
  • Freezer bag (for piping the batter)
  • Parchment paper (to place donuts after frosting)

Instructions

  1. Preheat Oven and Prepare Mold: Preheat your oven to 350°F (175°C) and grease your silicone donut mold thoroughly with non-stick cooking spray to ensure the donuts release easily after baking.
  2. Mix Cake Batter: In a mixing bowl, prepare the white cake mix according to the package directions, combining the required oil, eggs, and water. Once smooth, add a few drops of green liquid gel food coloring and blend until the batter reaches the desired green hue resembling watermelon rind.
  3. Fill Donut Molds: Transfer the green batter into a large freezer bag. Carefully cut a small corner off one end of the bag to create a piping bag. Pipe the batter into the greased donut molds, filling each almost to the top to allow space for rising.
  4. Bake Donuts: Place the filled molds into the preheated oven and bake for 15 minutes. After baking, remove and let them cool completely in the mold before gently removing each donut to maintain their shape.
  5. Color and Heat Frosting: Scoop the vanilla frosting into a microwavable bowl. Add a couple drops of pink liquid gel food coloring and stir well. Microwave the frosting for about 15 seconds to slightly liquefy it for easier dipping.
  6. Frost Donuts: Dip the top of each cooled green donut into the pink-colored frosting, covering the top surface evenly. Place the frosted donuts onto a piece of parchment paper to set properly.
  7. Add Chocolate Seeds and Set: While the frosting is still wet, sprinkle miniature chocolate chips on top of each donut to mimic watermelon seeds. Allow the frosting to set for about 15 minutes before serving.

Notes

  • Use a silicone donut mold for easy removal and even baking.
  • Adjust the amount of food coloring to achieve your preferred shades of green and pink.
  • Microwaving the frosting slightly helps to create a smooth, shiny glaze for dipping.
  • Miniature chocolate chips add a realistic watermelon seed look and a nice texture contrast.
  • Donuts can be stored in an airtight container at room temperature for up to 2 days.
  • Feel free to experiment with different cake flavors or frosting varieties for creative variations.
