  3. Sauté mushrooms: Heat olive oil in a large skillet over medium heat. Add diced shiitake mushrooms and 1/2 teaspoon salt, cooking for 3-5 minutes until the mushrooms soften and release their moisture.
  4. Combine and warm: Add the walnut mixture to the skillet with the mushrooms. Stir to combine thoroughly and cook just until the walnut meat is warmed through, about 1-2 minutes.
  5. Season and serve: Taste and adjust salt as needed. Serve as a taco filling or in any savory dish you prefer.
