- 1 cup cashews
- 1/2 cup water

Instructions

Then let the tofu sit without stirring for 10 or more minutes, adding more oil as necessary to prevent sticking, allowing the tofu to brown and develop crispy, almost crunchy pieces.
- Make Cashew Queso: In a high-speed blender, combine cashews, water, diced green chiles, taco seasoning, and a pinch of salt if needed. Blend vigorously until the mixture is completely smooth and creamy.
- Assemble the Crunchwrap: Lay a large burrito-sized flour tortilla flat on a clean surface. Layer the tofu sofritas, a generous portion of cashew queso, your chosen crunchy element (tostadas or tortilla chips), and any additional desired fillings like roasted vegetables, black beans, avocado slices, and fresh vegetables such as tomatoes, cabbage slaw, lettuce, and cilantro.
- Fold the Crunchwrap: Fold the edges of the tortilla inward toward the center to secure all the fillings inside, creating a circular wrapped pocket.
- Cook the Crunchwrap: Heat oil in a hot skillet over medium heat. Place the folded crunchwrap seam side down in the skillet. Cook for a few minutes on each side, pressing gently and flipping carefully until the exterior tortilla is firm, golden brown, and crunchy.
