Description

Delicious and healthy Vegan Coconut Cups featuring a rich chocolate base layered with a creamy coconut filling. These no-bake treats combine dates, cocoa, shredded coconut, and coconut yogurt for a perfect sweet snack that’s dairy-free, gluten-free, and refined sugar-free.

Ingredients

Chocolate Layer

  • 13 medium dates (Deglet Noor)
  • 5 tbsp shredded unsweetened coconut
  • 4 tbsp cocoa powder
  • 3/4 tbsp maple syrup (or any other liquid sweetener)

Coconut Layer

  • 1 cup shredded unsweetened coconut
  • 2/3 cup coconut yogurt
  • 3 tbsp maple syrup (or any other liquid sweetener)
  • 2 tbsp coconut oil (melted)

Instructions

  1. Prepare Ingredients: Measure all ingredients using a kitchen scale for accuracy, especially the dates and coconut for better texture consistency.
  2. Make Chocolate Layer: Process dates, shredded unsweetened coconut, cocoa powder, and maple syrup in a food processor for about 10 seconds until the mixture becomes crumbly and slightly sticky, forming a dough-like consistency.
  3. Form Base Layer: Transfer the processed chocolate mixture into a muffin pan, preferably using a silicone mold, and press it down firmly to create the base of the coconut cups.
  4. Prepare Coconut Layer: In a blender or food processor, blend shredded unsweetened coconut, coconut yogurt, maple syrup, and melted coconut oil together until smooth and creamy.
  5. Add Coconut Filling: Spoon the coconut mixture carefully over the pressed chocolate base in the muffin pan, then gently press down to level the filling.
  6. Set and Chill: Place the muffin pan in the freezer for at least one hour to allow the cups to set completely.
  7. Storage and Serving: Store the coconut cups in the refrigerator for up to 5-6 days or freeze for up to 2 months. Before serving, allow them to thaw for 20 to 30 minutes for the best texture and flavor.

Notes

  • Use Deglet Noor dates for optimal sweetness and texture. If your dates are dry, soak them in warm water for 10 minutes before using.
  • Coconut yogurt keeps the recipe vegan and adds creaminess; use a thick, unsweetened variety.
  • For easier removal, silicone muffin molds are recommended.
  • Adjust sweetness according to taste by adding more or less maple syrup.
  • Freeze time is essential to help the cups hold their shape.
