Ingredients

Cashew Base

  • 1 cup raw cashews
  • 3/4 cup water

Flavorings

  • 2 cloves garlic
  • 3 tablespoons lemon juice
  • 1 tablespoon Dijon mustard
  • 1 tablespoon capers, drained
  • 1 tablespoon vegan Worcestershire sauce
  • 1/2 teaspoon salt


Instructions

  1. Soak Cashews: Pour hot water over the raw cashews using an electric kettle or similar to soak them for 5 minutes. For best results with a regular blender, soak for several hours or overnight so the cashews become very soft.
  2. Blend Ingredients: Drain the soaked cashews and add them to a blender. Add the remaining ingredients, including 3/4 cup fresh water, and blend on high speed until the dressing is very smooth and creamy.
  3. Serve: Use the dressing immediately by tossing it with chopped romaine or kale, vegan croutons, and optionally vegan Parmesan for an authentic and delicious vegan Caesar salad experience.

Notes

  • Soaking time can be extended for a smoother dressing if you do not have a high-powered blender.
  • This dressing can be stored in an airtight container in the refrigerator for up to 5 days.
