Ingredients

For the Bruschetta Base

  • 3 large slices country-style or sourdough bread
  • 2 tablespoons olive oil
  • 1 clove garlic, peeled
  • sea salt and fresh pepper, to taste

For the Toppings

  • 4 oz. beet greens
  • 1 cup oven-roasted beets, sliced
  • 2 tablespoons plant-based (vegan) butter
  • 2 tablespoons balsamic reduction


Instructions

  1. Prepare Beet Greens: Wash and remove any tough stems or leaves from the beet greens. Bring a pot of water to a boil and blanch the beet greens for 2-3 minutes. Immediately transfer them to a colander, rinse with cool water to stop cooking, and let drain while preparing the bruschetta base.
  2. Create Toasted Crostini: Cut two oval-shaped pieces of bread from each slice, yielding six crustless bruschetta pieces. Brush both sides and the tops with olive oil. Bake in a toaster oven for about 15 minutes or until golden and crispy. Alternatively, bake in a conventional oven at 375°F until toasted.
  3. Garlic Rub: Remove the toasted bruschetta and rub the top of each piece with the peeled garlic clove. The rough toasted surface will grate the garlic, infusing the bread with flavor.
  4. Cook Beet Greens: Gently melt the vegan butter in a shallow saucepan. Squeeze out excess water from the drained beet greens and add them to the pan. Season lightly with salt and stir briefly until greens are warmed through. Remove from heat and set aside.
  5. Warm Roasted Beets: Using the same skillet, add the sliced roasted beets. Season lightly with salt and pepper and warm through over medium heat for a couple of minutes.
  6. Assemble Bruschetta: Top each toasted bread piece first with the buttered beet greens, then add the warmed roasted beets. Drizzle each with balsamic reduction. Serve at room temperature for the best flavor.

  • Oven-roasting the beets beforehand enhances their natural sweetness; you can roast them ahead of time for convenience.
