Description

The Unicorn Gin Cocktail is a visually stunning and refreshing drink that combines the floral and fruity notes of blackberry-raspberry hibiscus tea with gin, citrus bitters, and a splash of simple syrup. This magical cocktail transforms color from blue to pink when fresh lemon juice is added, making it a fun and elegant option for gatherings or special occasions.

Ingredients

Tea Infusion

  • 8 oz. water
  • 1 bag blackberry-raspberry hibiscus tea (Bigelow preferred)

Cocktail Mixture

  • 8 oz. brewed hibiscus tea (from infusion)
  • 12 oz. gin
  • 1 tablespoon simple syrup
  • ½ teaspoon orange bitters (any citrus bitters will do)

Garnish and Serving

  • 4 lemon wedges
  • Mint for garnish
  • 1 cup ice
  • 4 full ice cubes

Instructions

  1. Infuse the Tea: Add 8 oz. of water to a jar and steep one bag of blackberry-raspberry hibiscus tea for 8 minutes to create a flavorful tea base.
  2. Mix the Cocktail: In a pitcher, combine the brewed tea, 12 oz. gin, 1 tablespoon simple syrup, and ½ teaspoon orange bitters. Add 1 cup of ice and stir well with a cocktail spoon to chill the mixture.
  3. Prepare Glasses: Pour the chilled cocktail evenly into 4 cocktail glasses, using a strainer to hold back the ice from the pitcher.
  4. Add Ice and Lemon: Place one full ice cube into each glass. Squeeze one lemon wedge into each cocktail and watch the extraordinary color change from blue to pink as the citrus reacts with the hibiscus tea, adding a fresh tartness.
  5. Garnish and Serve: Garnish each glass with a sprig of mint and serve immediately for a refreshing and visually delightful experience.

Notes

  • Use fresh lemon wedges to achieve the vibrant color change effect.
  • You can substitute any citrus bitters if orange bitters are not available.
  • Adjust simple syrup to taste depending on desired sweetness.
  • Serve immediately after adding lemon to enjoy the color transformation at its peak.
  • For a non-alcoholic version, omit the gin and increase the iced tea.
