Description

This Ultimate Green Bean Casserole is a decadent twist on the classic holiday side dish, featuring crispy bacon, sautéed mushrooms and onions, creamy mushroom soup, melted Monterey Jack cheese, and topped with crunchy French fried onions. Perfectly baked to a bubbly golden finish, it's a comforting and crowd-pleasing casserole that elevates green beans to a new level of deliciousness.

Ingredients

Meat and Vegetables

  • 6 strips bacon
  • 1/2 yellow onion, finely diced
  • 1 1/2 cups chopped button mushrooms
  • 3 cloves garlic, minced
  • 4 (14.5-ounce) cans cut green beans, drained

Dairy and Liquids

  • 2 (10.5-ounce) cans cream of mushroom soup (undiluted)
  • 1/4 cup milk
  • 1 cup shredded Monterey Jack cheese

Seasonings and Toppings

  • Salt and pepper to taste
  • 1 1/2 cups French fried onions

Instructions

  1. Preheat oven and prepare dish: Preheat your oven to 350°F (175°C) and lightly spray a 9x13-inch baking dish with nonstick cooking spray to ensure easy removal of the casserole after baking.
  2. Cook bacon and onions: In a large skillet over medium-low heat, cook the bacon strips until crisp. Once done, transfer the bacon to paper towels to drain excess grease, then crumble them into small pieces. Remove all but about 2 tablespoons of the bacon grease from the skillet and return to medium heat. Add the diced onions and cook, stirring occasionally, for about 5 minutes or until the onions turn translucent and soft.
  3. Sauté mushrooms and garlic: Add the chopped button mushrooms to the skillet with the onions and cook, stirring occasionally, for about 5 minutes until the mushrooms become golden brown. Next, add the minced garlic and cook for an additional minute, just until fragrant to enhance the flavor.
  4. Combine soup mixture and cheese: Stir in the undiluted cream of mushroom soup into the skillet along with the crumbled bacon. Mix well to incorporate all the ingredients. Then add the milk and shredded Monterey Jack cheese, stirring until the cheese melts completely and the mixture becomes creamy. Season with salt and pepper to taste.
  5. Add green beans and assemble the casserole: Gently fold in the drained cut green beans, ensuring they are evenly coated with the creamy mixture. Pour this combined mixture into the prepared baking dish, spreading it out evenly. Sprinkle the French fried onions on top to add a crunchy topping.
  6. Bake until bubbly and golden: Place the baking dish in the preheated oven and bake, uncovered, for 30 minutes or until the casserole is hot, bubbly, and the French fried onions have turned golden brown.

Notes

  • You can substitute the button mushrooms with cremini or baby bella mushrooms for a deeper flavor.
  • For a lower-fat option, use reduced-fat soup and cheese and skim milk.
  • If fresh green beans are preferred, blanch 2 pounds of fresh green beans before using.
  • French fried onions can be found in most grocery stores or made at home for extra crispness.
  • This casserole can be prepared ahead of time and baked just before serving. If refrigerated, add a few extra minutes to the baking time to ensure it's heated through.
