Description

A hearty and flavorful 30-minute Turkey Sweet Potato Chili loaded with ground turkey, sweet potatoes, and tomatoes simmered in a rich, thick broth. This nutritious chili is garnished with creamy avocado, fresh cilantro, and shredded cheddar cheese, making it a perfect warm meal that's both healthy and satisfying.

Ingredients

Main Ingredients

  • 1 tbsp olive oil
  • 1/2 sweet onion, diced
  • 5-7 cloves garlic, minced
  • 1 lb ground turkey
  • 28 oz canned petite diced tomatoes
  • 16 oz canned tomato sauce
  • 1/2 cup chicken broth
  • 1 large sweet potato, 1-inch cubed (~12 oz)
  • 1 tbsp chili powder
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • 1 tbsp granulated sugar
  • 1 cup frozen corn
  • Salt, to taste
  • Black pepper, to taste

Garnish

  • 1/4 cup cilantro, chopped
  • 1/3 cup cheddar cheese, shredded
  • 2 avocados, sliced

Instructions

  1. Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onions and minced garlic, and sauté for 1-2 minutes until fragrant and slightly softened.
  2. Cook Turkey: Add the ground turkey to the pot. Break it apart with a spoon or spatula, seasoning it lightly with salt and pepper. Cook until the turkey is almost fully cooked and no longer pink.
  3. Add Vegetables and Spices: Stir in the petite diced tomatoes, tomato sauce, chicken broth, cubed sweet potatoes, chili powder, smoked paprika, ground cumin, and granulated sugar. Mix well to combine all ingredients.
  4. Simmer Chili: Bring the mixture to a boil, then reduce the heat to medium. Let it simmer uncovered for about 15 minutes, or until the sweet potatoes are tender and easily pierced with a fork.
  5. Add Corn and Finish Cooking: Stir in the frozen corn and increase heat to medium-high. Cook for a few more minutes until the chili returns to a boil. Adjust seasoning with additional salt and pepper as needed. Remove from heat.
  6. Serve and Garnish: Ladle the chili into bowls and garnish with chopped cilantro, shredded cheddar cheese, and sliced avocado as desired. Enjoy your healthy and comforting meal!

Notes

  • You can substitute ground turkey with ground chicken or lean beef if preferred.
  • If you want extra heat, add a pinch of cayenne pepper or chopped jalapeños while cooking.
  • For a vegetarian version, omit turkey and use beans instead, increasing the cooking time accordingly.
  • Leftovers store well in the fridge for up to 3 days or freeze for up to 2 months.
  • Adjust the thickness of the chili by adding more chicken broth or simmering longer to reduce liquid.
