Ingredients

For the Honey Lime Dressing

  • 2 teaspoons fresh ginger juice (extracted from grated ginger)
  • 1 lime, juiced
  • 2 tablespoons honey

For the Fruit Salad

  • 2 cups pineapple, diced
  • 2 cups papaya, diced
  • 1 dragon fruit, peeled and chopped
  • 3 kiwis, peeled and chopped
  • 1 pint raspberries
  • 1 pint blueberries


Instructions

  1. Extract Ginger Juice: Using a microplane or fine grater, grate fresh ginger onto a cutting board or into a bowl. Place a fine mesh strainer over a small bowl, transfer the grated ginger pulp and any juices into the strainer, and press down with the back of a spoon to extract the juice. Discard the solids.
  2. Make the Dressing: In the bowl with the collected ginger juice, add the honey and lime juice. Whisk together until well combined, then set aside.
  3. Prepare the Fruit: Dice the pineapple and papaya, peel and chop the dragon fruit and kiwis, and ensure the berries are rinsed and ready to use.
  4. Assemble the Salad: In a large bowl, layer the heavier fruits like pineapple and papaya at the bottom. Add the softer fruits and berries on top, placing delicate raspberries just before serving to avoid them getting crushed.
  5. Toss with Dressing: Drizzle the honey lime dressing over the fruit and gently toss to coat all pieces evenly without bruising the fruit. Serve immediately for best texture and freshness.
  6. Make-Ahead Option: For preparation up to a day ahead, combine all fruits except the raspberries and toss together. Store in the refrigerator. Add raspberries and the dressing just before serving to keep the berries fresh and intact.
