- 2 1/2 cups vegetable broth
Flax Egg
- 3 tablespoons flaxseed meal (ground flaxseeds)
- 1/3 cup water
Sautéed Vegetables
- 2 tablespoons olive oil OR 1/4 cup water for steaming
- 3 garlic cloves, minced
- 1 small onion, finely diced
- 1 small red bell pepper, finely diced
- 1 carrot, finely diced or grated
- 1 celery rib, finely diced
Dry Ingredients
- 3/4 cup oats (gluten free oats used)
- 1/2 cup oat flour or finely ground oats (any flour of choice can work)
- 1 teaspoon dried thyme (or Italian seasoning)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 – 1 teaspoon cumin (optional)
- 1/4 – 1/2 teaspoon ground chipotle pepper (optional)
- Cracked pepper & sea salt, to taste
Glaze
- 3 tablespoons organic ketchup
- 1 tablespoon apple cider vinegar or balsamic vinegar
- 1 tablespoon pure maple syrup
Instructions
- Prepare Lentils: Rinse the lentils thoroughly, removing any debris. In a large pot, combine lentils with 2 1/2 cups vegetable broth. Bring to a boil, then reduce heat to a simmer, cover, and cook for 35-40 minutes, stirring occasionally. Allow lentils to cool uncovered for about 15 minutes, letting the mixture thicken slightly without draining the remaining liquid.
- Preheat Oven: Set your oven to 350 degrees Fahrenheit in preparation for baking the loaf.
- Make Flax Egg: In a small bowl, mix 3 tablespoons of flaxseed meal with 1/3 cup water. Let this mixture sit for at least 10 minutes, preferably refrigerated, until it thickens to act as a vegan binder.
- Sauté Vegetables and Spices: Heat olive oil or 1/4 cup water in a sauté pan over medium heat. Add minced garlic, diced onion, red bell pepper, carrot, and celery. Cook for about 5 minutes until softened. Stir in dried thyme, garlic powder, onion powder, cumin (if using), and ground chipotle pepper (if using), ensuring everything is well combined. Remove from heat and allow to cool.
- Mash the Lentils: Using an immersion blender, food processor, fork, or potato masher, puree about 3/4 of the cooked lentil mixture to create a thick, sticky base. This step helps bind the loaf together.
- Combine Ingredients: In a large mixing bowl, combine the sautéed vegetables, the blended and whole lentils, oats, oat flour, and the prepared flax egg. Mix thoroughly. Season with cracked pepper and sea salt to taste, adjusting herbs or spices as desired.
- Form the Loaf: Line a 9x5 inch loaf pan with parchment paper, leaving overlap for easy removal. Transfer the lentil mixture to the pan, pressing firmly and evenly into all edges.
- Prepare and Apply Glaze: In a small bowl, whisk together ketchup, apple cider vinegar (or balsamic), and pure maple syrup until well blended. Spread this glaze evenly over the top surface of the loaf for a flavorful finish.
- Bake the Loaf: Place the loaf pan in the center of the preheated oven and bake for 45 to 50 minutes until the loaf is set and the glaze is slightly caramelized. Allow to cool for 10-15 minutes before slicing to maintain shape.
- Serve: Slice into 8 servings and enjoy as a main dish alongside your favorite sides.
- Serving Suggestions: This lentil loaf pairs wonderfully with cooked asparagus, green beans, Brussels sprouts, mashed potatoes, roasted red potatoes, scalloped potatoes, savory sautéed kale, baked beans, macaroni salad, or a simple green salad.
Notes
- Use gluten-free oats and oat flour to make the recipe gluten free.
- The flax egg acts as a vegan binder—do not skip it to ensure the loaf holds together.
- Adjust spices according to your preference for heat or smokiness with cumin and chipotle pepper.
- If glaze is too thick, thin with a teaspoon of water or extra vinegar and maple syrup.
- Let the loaf cool before slicing to maintain firm slices.
- The broth can be water if you don’t have vegetable broth on hand, but broth adds more flavor.
- Leftovers keep well refrigerated for 3-4 days and can be frozen for up to 2 months.
