  2. Mix the burger ingredients: Add pumpkin puree, cooked white beans, chopped onion, garlic, Italian seasoning, salt, black pepper, and paprika to the food processor with the remaining oat flour. Blend until the mixture is well incorporated but still slightly textured. Adjust seasoning to taste. If the mixture feels too wet or sticky, add a bit more oat flour to achieve a slightly sticky but workable consistency.
  3. Form the patties: Wet your hands to prevent sticking. Using a large ice cream scoop or your hands, portion out even-sized balls of the mixture and flatten to your desired patty thickness. Lightly sprinkle both sides of each patty with the reserved oat flour.
  4. Refrigerate or freeze (optional): If not cooking immediately, cover patties and refrigerate or freeze for longer storage.
