Ingredients

Tapioca Pearls

  • 1/2 cup small-sized uncooked tapioca pearls (about 60g)
  • 4 cups water (for boiling tapioca)

Mango Mixture

  • 3 ripe mangos (about 1 kg)
  • 200 ml unsweetened coconut milk (1/2 of a 13.5 oz. can)
  • 60 ml sweetened condensed milk (1/4 cup, or more to taste)
  • 1/2 teaspoon vanilla extract


Instructions

  1. Cook Tapioca Pearls: In a pot, bring 4 cups of water to a rolling boil. Add the small-sized tapioca pearls only after the water reaches a full boil to ensure proper cooking. Stir gently and bring the mixture back to a boil. Lower the heat and simmer for 20 minutes, stirring occasionally until the tapioca pearls are fully translucent, indicating they are cooked through. If they still have a white center, turn off the heat, cover the pot, and let the tapioca sit in the hot water for an additional 10 minutes to finish cooking.
  2. Cool Tapioca: Once cooked, drain the tapioca pearls using a fine mesh strainer. Rinse them under cold running water to stop the cooking process and cool them down. Then soak them in a bowl of cold water while you prepare the mango mixture to prevent them from sticking together.
  3. Prepare Mangoes: Peel the mangos and carefully remove the pits. Reserve a generous handful of mango chunks for garnishing the dessert later. The remaining mango flesh will be used for blending.
  4. Make Mango Mixture: In a blender, combine the peeled mango flesh, unsweetened coconut milk, sweetened condensed milk, and vanilla extract. Blend well until smooth and creamy. Transfer this mango mixture to a large bowl. For a chilled dessert, refrigerate the mango mixture for at least an hour before combining with tapioca.
  5. Assemble and Serve: Drain the cold soaked tapioca pearls from their water bath and add them gently into the chilled mango mixture. Mix carefully to combine. Spoon the Mango Sago into individual serving bowls and garnish the top with the reserved mango chunks for texture and presentation. Serve immediately for the best flavor and texture.
