Description

Thai Iced Tea Pops are a refreshing and creamy frozen treat inspired by the classic Thai iced tea beverage. Combining robust brewed black tea with sweetened coconut milk, these popsicles offer a perfect balance of bold tea flavors and smooth tropical creaminess. Ingredients

Tea Base

  • 1 1/2 cups water
  • 8 black tea bags (preferably Ceylon or 1/3 cup loose tea leaves)
  • 1/3 cup white sugar (organic for vegan-friendly)

Creamy Addition

  • 13.5 ounce can full-fat coconut milk


Instructions

  1. Boil Water: Bring the water to a boil in a small saucepan to prepare the tea base.
  2. Steep Tea and Dissolve Sugar: Remove the saucepan from heat, add the tea bags and sugar, stirring until the sugar dissolves. Let the tea steep for 5 minutes before removing the tea bags or straining if using loose tea leaves.
  3. Add Coconut Milk: Stir in the full-fat coconut milk thoroughly. If needed, gently reheat the mixture to dissolve any coconut milk chunks.
  4. Chill Mixture: Transfer the tea mixture to the refrigerator and chill it until it reaches room temperature or slightly below, about one hour.
  5. Stir After Chilling: Remove from the fridge and stir well to reincorporate the coconut milk and tea, which may have separated during chilling.
  6. Freeze into Popsicles: Carefully pour the mixture into popsicle molds and freeze until solid. Once frozen, remove from molds and serve immediately.

  • Using full-fat coconut milk provides a rich, creamy texture similar to traditional Thai iced tea with condensed milk.
  • Adjust sugar quantity to taste for a sweeter or less sweet treat.
  • Using Ceylon black tea enhances the tea’s flavor authenticity.
  • If you don't have popsicle molds, small paper cups and popsicle sticks work well as a substitute.
