Instructions

  1. Prepare the batter: In a large mixing bowl, whisk together rice flour, shredded coconut, sugar, and sesame seeds until evenly combined.
  2. Add cold water: Make a well in the center of the dry ingredients and gradually pour in the ice cold water while whisking to incorporate it smoothly with the flour mixture.
  3. Incorporate coconut milk: Continue whisking the batter until the coconut milk is fully mixed in, creating a smooth, slightly thick batter.
  4. Prepare the bananas: Slice the Thai bananas or plantains into six even pieces each to ensure uniform frying.
  5. Dip bananas in batter: Dip each banana piece into the batter, gently shaking off any excess coating to avoid clumps.
  6. Heat oil: Pour vegetable oil into a wok and heat over medium-high until hot enough for deep frying (around 350°F or 175°C).
