Instructions
- Prepare the skillet: Heat the olive oil in a large skillet over medium-high heat until hot. Add the finely chopped red onion and ground beef. Cook, breaking up the beef with a spatula, until the beef is browned and cooked through.
- Add spices and garlic: Stir in the minced garlic, cumin, smoked paprika, chili powder, salt, and pepper. Cook for about 1 minute until the spices are fragrant.
- Add vegetables and simmer: Add the chopped red bell pepper, drained green chiles, chopped sweet potatoes, fire roasted diced tomatoes, and water. Stir everything together then cover the skillet with a lid. Reduce heat to low and let simmer for about 15 minutes, or until the sweet potatoes are fork-tender.
- Melt the cheese: Remove the lid and sprinkle the grated cheddar cheese evenly over the mixture. Cover again and allow the cheese to melt for 1 to 2 minutes.
