Description

This Tahini Granola with Rose and Pistachios is a fragrant and crunchy breakfast or snack option, combining nutty tahini, sweet maple syrup, aromatic rose petals, and crunchy pistachios. It’s baked to golden perfection and offers a unique floral twist on classic granola.

Ingredients

Wet Ingredients

  • 1/2 cup tahini
  • 1/3 cup maple syrup
  • 1 tsp vanilla extract

Dry Ingredients

  • 1/2 tsp ground cinnamon
  • 1/4 tsp sea salt
  • 2 cups old-fashioned rolled oats
  • 1/2-1 cup raw shelled pistachios (or another nut or pepitas)
  • 1/2 cup dried rose petals

Instructions

  1. Preheat Oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking and for easy cleanup.
  2. Mix Wet Ingredients: In a large mixing bowl, combine the tahini, maple syrup, vanilla extract, ground cinnamon, and sea salt. Stir until the mixture is smooth and well blended.
  3. Add Dry Ingredients: Add the rolled oats and pistachios to the wet mixture. Stir thoroughly until all the oats and nuts are evenly coated with the tahini mixture.
  4. Spread Mixture: Spread the granola mixture evenly onto the prepared baking sheet in a thin layer. Note that the mixture will be sticky.
  5. First Bake: Bake in the preheated oven for 10 minutes. This allows the granola to begin to crisp up and develop flavor.
  6. Flip and Continue Baking: Remove the baking sheet carefully, flip or stir the granola gently to promote even baking, then return it to the oven to bake for an additional 5 minutes or until the granola is lightly golden and fragrant.
  7. Cool: Remove the granola from the oven and allow it to cool completely on the pan for about 20 minutes. The granola will crisp up further as it cools, improving its texture.
  8. Add Rose Petals and Store: Once cooled, toss the granola with the dried rose petals. Store the granola in an airtight container to maintain freshness and crunch.

Notes

  • Baking times can vary slightly; watch granola closely to avoid burning.
  • You can substitute pistachios with almonds, pecans, or pepitas if preferred.
  • Dried rose petals add a delicate floral note but can be omitted if unavailable.
  • This granola stores well in an airtight container for up to two weeks.
  • Use old-fashioned rolled oats for best texture; instant oats will be too soft.
