Ingredients

For the Gnocchi

  • 1 large purple sweet potato (about 2 lbs)
  • 2 cups all-purpose flour
  • ¼ cup grated Parmesan cheese
  • 1 large egg
  • ¼ teaspoon salt

For the Sauce

  • 2 tablespoons unsalted butter
  • 2 fresh sage leaves
  • 2 cloves garlic, finely minced


Instructions

  1. Cook the sweet potato. Wrap the sweet potato in a damp paper towel and microwave for 5 to 10 minutes until tender when pierced with a fork. Alternatively, bake in a preheated 400°F oven on a baking sheet for 40-45 minutes until soft. Allow to cool.
  2. Prepare the dough. Peel the cooled sweet potato and mash it thoroughly in a large bowl using a fork or potato masher. Add the flour, Parmesan cheese, egg, and salt. Mix until combined and the dough is soft but not sticky. Add flour a tablespoon at a time if needed.
  3. Shape the gnocchi. Divide the dough into four equal portions. Roll each into a long rope approximately 1 inch thick. Cut the rope into ½ inch pieces. Roll each piece on the tines of a fork to create classic gnocchi indentations, then set aside.
  4. Boil the gnocchi. Bring a large pot of salted water to a boil. Add gnocchi in batches and cook for 3-5 minutes or until they float to the surface. Remove with a slotted spoon and drain well.
  5. Prepare the garlic butter sauce. In a large skillet over medium heat, melt the butter with sage leaves and minced garlic. When the butter starts bubbling and the garlic is fragrant, add the boiled gnocchi.
  6. Sauté the gnocchi. Cook the gnocchi in the butter sauce until they become lightly crisp and golden brown on the edges, about 3-4 minutes, stirring gently to coat.
  7. Serve. Remove from heat and allow to cool slightly. Optionally, top with extra grated Parmesan before serving. Enjoy warm.
