Ingredients
Main Ingredients
- 2 cups watermelon cubes, seeds and rind removed
- 2 tbsp unflavored grass fed beef gelatin powder
- 1 tbsp lemon juice
- 2 tbsp honey
For Coating
- ¼ cup sugar
- 1 tsp citric acid
Instructions
- Blend Watermelon: Place the watermelon cubes into a high-powered blender and blend until smooth to extract all the natural juice and flavor.
- Strain Juice: Pour the blended watermelon through a fine mesh strainer into a bowl to remove pulp and obtain clear juice.
- Measure Juice: Measure out 1 ½ cups of the strained watermelon juice and transfer it to a saucepan for cooking.
- Add Ingredients: Whisk in the lemon juice, unflavored gelatin powder, and honey into the watermelon juice until well combined.
- Heat Mixture: Place the saucepan over medium-low heat and gently warm the mixture, stirring constantly until the gelatin and honey dissolve completely, about 3-4 minutes. Do not let the mixture boil.
- Mold Gummies: Pour the warm gelatin mixture into silicone molds for shaping the gummies.
- Chill: Refrigerate the molds for at least one hour or until the gummies are fully set and firm to the touch.
- Prepare Coating: In a small bowl, combine sugar and citric acid evenly.
- Coat Gummies: Remove the set gummies from the molds and toss them gently in the sugar and citric acid mixture until they are fully coated for a tangy and sweet finish.
Notes
- Do not boil the gelatin mixture as it can affect the texture of the gummies.
- Using fresh watermelon and grass-fed gelatin will yield the best flavor and texture.
- Silicone molds work best for easy removal of gummies.
- Store gummies in an airtight container in the refrigerator for up to one week.
- Citric acid adds a tangy flavor and helps preserve the gummies slightly.
