Ingredients

Chicken Marinade

  • 4 boneless, skinless chicken thighs
  • 1 tbsp lime juice
  • 1 tbsp avocado oil
  • 1 tsp chili powder
  • 1 tsp cumin powder
  • ½ tsp garlic powder (or 2 minced garlic cloves)
  • ½ tsp salt
  • ¼ tsp black pepper

Street Corn Topping

  • 1 cup sweet corn kernels (grilled if possible, or frozen)
  • ¼ cup thinly sliced red onion
  • 1 cup sour cream (save half to drizzle on top)
  • 2 tbsp mayonnaise
  • ½ cup Cotija cheese, crumbled (plus extra for garnish)
  • 1 tsp chili powder
  • Salt and pepper, to taste
  • 1 tbsp lime juice (from 1 lime)

Other Ingredients

  • 3 cups cooked rice
  • Fresh cilantro, for garnish
  • 1 lime, cut into wedges for serving

Instructions

  1. Season and marinate the chicken: In a bowl, combine lime juice, avocado oil, chili powder, cumin powder, garlic powder, salt, and black pepper. Coat the chicken thighs evenly with this mixture and let them marinate in the refrigerator for 15 to 30 minutes to absorb the flavors.
  2. Cook the chicken: Heat a skillet over medium-high heat. Place the marinated chicken thighs onto the hot skillet and sear for 8 to 10 minutes on each side, or until the chicken is fully cooked and has reached an internal temperature of 165°F (74°C). Remove from heat and let the chicken rest before slicing.
  3. Prepare the street corn topping: In a mixing bowl, combine the grilled or sautéed sweet corn kernels, thinly sliced red onion, half of the sour cream, mayonnaise, crumbled Cotija cheese, chili powder, salt, pepper, and lime juice. Mix well until the ingredients are fully incorporated and seasoned to taste.
  4. Prepare the rice: Reheat the cooked rice by adding a splash of water to prevent drying, and warming it until it is fluffy and hot. This can be done in the microwave or on the stovetop.
  5. Assemble the bowls: In each bowl, add a base of the reheated rice, top with sliced chicken thighs, generous spoonfuls of the street corn topping, extra Cotija cheese, and fresh cilantro leaves. Garnish each bowl with lime wedges. Optionally, drizzle the remaining sour cream on top, and sprinkle with a pinch of Tajín seasoning for an extra burst of flavor.
  6. Serve: Serve the bowls warm with an optional squeeze of fresh lime juice for brightness. Enjoy this vibrant and satisfying meal immediately.

Notes

  • For best flavor, use grilled corn for the street corn topping—but sautéed frozen corn works as a convenient alternative.
  • You can substitute chicken thighs with chicken breasts for a leaner option, though cooking times may vary slightly.
  • To make this dish dairy-free, omit the Cotija cheese and substitute sour cream with a dairy-free alternative.
  • Adjust the chili powder and seasoning according to your preferred spice level.
  • Leftover components can be stored separately in airtight containers in the fridge for up to 3 days.
  • Adding a sprinkle of Tajín or chili-lime seasoning at the end enhances the authentic Mexican street corn flavor.
