Description

A vibrant and refreshing Strawberry Spinach Salad featuring a sweet and tangy poppy seed dressing. This easy-to-make salad combines fresh spinach, juicy strawberries, mandarin oranges, blueberries, and crunchy sliced almonds for a perfect balance of flavors and textures, ideal for a light lunch or a side dish.

Ingredients

Dressing:

  • 1/2 cup granulated sugar
  • 1/4 cup apple cider vinegar
  • 2 tablespoons poppy seeds
  • 1 1/2 teaspoons minced onion
  • 1/4 teaspoon paprika
  • 1/4 teaspoon Worcestershire sauce
  • 1/2 cup canola oil

Salad:

  • 10 ounces fresh spinach
  • 16 ounces fresh strawberries, sliced
  • 15 ounces mandarin oranges, drained
  • 6 ounces fresh blueberries
  • 1/2 cup sliced almonds

Instructions

  1. Prepare Poppy Seed Dressing: In a blender, combine the sugar, apple cider vinegar, poppy seeds, minced onion, paprika, and Worcestershire sauce. Blend the mixture until well combined and smooth.
  2. Emulsify the Dressing: With the blender running on low speed, slowly pour in the canola oil through the opening of the blender cover. Continue blending until the dressing is thoroughly mixed and emulsified.
  3. Assemble the Salad: In a large salad bowl, add the fresh spinach, sliced strawberries, drained mandarin oranges, fresh blueberries, and sliced almonds. Toss gently to mix the ingredients.
  4. Serve: Just before serving, pour the prepared poppy seed dressing over the salad. Toss the salad gently to coat the ingredients evenly with the dressing and serve immediately for the freshest taste.

Notes

  • For best flavor, prepare the dressing just before serving to keep it fresh and vibrant.
  • You can substitute fresh or frozen mandarin oranges if fresh are not available, just drain thoroughly.
  • To add extra protein, grilled chicken or feta cheese can be added to the salad.
  • Keep salad chilled before serving for a more refreshing experience.
  • The dressing can be stored in the refrigerator for up to one week in an airtight container.
