Description

Delight in these moist and tangy Strawberry Lemon Blondies, combining the freshness of diced strawberries and zesty lemon juice in a rich buttery blondie base. Topped with a luscious strawberry-lemon glaze, this dessert is perfect for summer gatherings or anytime you want a bright, fruity twist on classic blondies.

Ingredients

Blondie Batter

  • 1 cup unsalted butter, at room temperature
  • 3/4 cup sugar
  • 1 large egg
  • 1/4 cup fresh squeezed lemon juice
  • 2 1/4 cups all purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup diced fresh strawberries

Glaze

  • 1 cup powdered sugar, sifted (measure before sifting)
  • 1 Tbsp strawberry puree (from about 2 large strawberries)
  • 1 Tbsp lemon juice (or enough to thin the glaze to spreadable consistency)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Prepare a 9-inch square baking pan by lining it with parchment paper, allowing for easy removal of the blondies later.
  2. Cream Butter and Sugar: In a mixing bowl, cream together the unsalted butter and sugar until the mixture is light and fluffy. This step is crucial for a tender texture.
  3. Add Egg and Lemon Juice: Beat in the egg until fully incorporated, then add the fresh lemon juice. It’s normal if the lemon juice doesn’t fully mix in at this stage.
  4. Combine Dry Ingredients: Whisk together the flour, baking powder, and salt in a separate bowl to ensure even distribution of leavening and seasoning.
  5. Mix Wet and Dry: Gradually add the dry ingredients to the wet mixture, stirring until no dry flour remains, forming a thick batter.
  6. Fold in Strawberries: Gently fold the diced fresh strawberries into the batter, being careful not to overmix to prevent breaking the fruit.
  7. Spread Batter and Bake: Spread the batter evenly into the prepared pan, smoothing the top with an offset spatula. Bake for 30-35 minutes until the edges turn golden and the center is set but still moist. Test with a toothpick; it should come out moist but not wet.
  8. Prepare Glaze: Meanwhile, process about 2 large strawberries in a food processor and strain to obtain 1 tablespoon of puree. In a bowl, whisk together the powdered sugar, strawberry puree, and lemon juice until smooth. Adjust thickness by adding more sugar or lemon juice as necessary.
  9. Glaze Blondies: Let the blondies cool completely on a rack, then spread the strawberry-lemon glaze evenly over the top. Allow the glaze to set before slicing into 12 servings.

Notes

  • For best texture, do not over-bake the blondies; they should remain moist in the center.
  • Using parchment paper makes it easier to remove and slice blondies cleanly.
  • Fresh strawberries are recommended for the best flavor and texture.
  • The glaze consistency can be adjusted by adding more powdered sugar if too thin, or more lemon juice if too thick.
  • These blondies can be stored in an airtight container at room temperature for up to 3 days.
