Description

These Sprinkles Filled Cupcakes are a delightful and colorful Easter treat featuring a surprise sprinkle-filled center. Made with an easy boxed yellow cake mix and decorated with store-bought frosting and festive Easter candies, they’re perfect for parties and celebrations. The moist cupcakes hide a fun burst of sprinkles inside, adding both texture and a pop of color, making them a hit with kids and adults alike.

Ingredients

Cake Batter

  • 1 box (15 oz) yellow cake mix
  • 1 cup water
  • 0.5 cup vegetable oil
  • 3 large eggs

Frosting and Decoration

  • 2 cans store-bought frosting
  • Easter sprinkles (amount as desired)
  • Jelly beans or other Easter candy for garnish

Instructions

  1. Preheat the oven: Set your oven temperature to 350°F (177°C) to prepare for baking the cupcakes.
  2. Make the batter: In a large mixing bowl, combine the dry yellow cake mix, water, vegetable oil, and eggs. Beat on medium speed for 2 minutes until the batter is smooth and well blended.
  3. Fill cupcake liners: Place 24 cupcake liners in a muffin pan. Fill each liner halfway with the prepared batter. Gently tap the pan on the counter to level the batter for even baking.
  4. Bake the cupcakes: Bake for 12-15 minutes or until a toothpick inserted in the center comes out clean, indicating the cupcakes are fully cooked.
  5. Cool the cupcakes: Remove the cupcakes from the pan and allow them to cool completely on a wire rack before filling and frosting.
  6. Create sprinkle holes: Using the wide end of a star frosting tip, carefully punch a hole into the center of each cupcake, about halfway down. Set the cupcake piece aside for each.
  7. Fill with sprinkles: Fill each cupcake hole generously with Easter sprinkles to create a colorful surprise inside.
  8. Frost the cupcakes: Frost each cupcake over the sprinkle-filled hole to conceal the filling. Use store-bought frosting and spread or pipe it neatly on top.
  9. Decorate: Garnish the frosted cupcakes with additional sprinkles and a few jelly beans or other Easter candies to make them festive and inviting.

Notes

  • You can use any flavor boxed cake mix, but yellow or white cake is preferred to let the colorful sprinkles stand out.
  • Switch up sprinkles colors and themes to customize for other holidays or occasions.
  • Store-bought frosting keeps things simple but feel free to make your own frosting if desired.
  • If you don’t have a star frosting tip, an apple corer or melon baller works well to create the sprinkle hole.
  • If you lack a piping bag, try the Ziploc bag method for frosting your cupcakes neatly.
