Ingredients

For the Tofu Marinade and Cooking

  • 450 grams extra firm tofu (drained and pressed)
  • 2 tbsp sesame oil
  • 2 tbsp soy sauce
  • 2 tsp garlic powder
  • 1 tsp lime juice
  • Pinch of salt

Spring Roll Filling

  • 1 package rice noodles
  • 6 tbsp sesame oil
  • 1/4 cup gluten-free soy sauce (or tamari)
  • 2 tbsp maple syrup
  • 2 tbsp fresh lime juice
  • 2 tsp fresh ginger (grated)
  • 2 tsp garlic cloves (minced)
  • 2 tsp sriracha
  • 1/2 tsp chili flakes
  • 2 medium carrots (sliced or julienned)
  • 1/4 red cabbage (sliced)
  • 3 stalks green onions (sliced, with some cut into long thin sticks for presentation)
  • 13-15 spring roll wrappers (rice paper)


Instructions

  1. Prep The Filling Ingredients: Start by preparing the tofu, vegetables, and noodles. Press tofu to remove excess moisture, then slice into sticks.
  2. Marinate the Tofu: In a small bowl, combine 2 tbsp sesame oil, 2 tbsp soy sauce, 2 tsp garlic powder, 1 tsp lime juice, and a pinch of salt. Pour over tofu sticks and marinate for at least 5 minutes to absorb flavors.
  3. Cook the Tofu: Preheat your air fryer or oven to 375°F (190°C). Arrange tofu pieces in the air fryer basket or on a parchment-lined baking sheet, making sure pieces don’t touch. Air fry for 15 minutes or bake for 20-30 minutes, flipping halfway for even cooking, until tofu is crispy and golden.
  4. Prepare Vegetables: Julienne the carrots, slice the red cabbage and green onions; cut some green onions into long thin sticks for an elegant presentation. Use any other available veggies if desired.
  5. Cook Rice Noodles: Boil a large pot of water and cook rice noodles according to package instructions, avoiding overcooking. Drain and rinse with hot tap water to remove excess starch and prevent sticking. Set aside.
  6. Make the Sauce: Combine 1/4 cup gluten-free soy sauce, 2 tbsp maple syrup, 2 tbsp fresh lime juice, 6 tbsp sesame oil, 2 tsp sriracha, 2 tsp grated ginger, and 2 tsp minced garlic in a small bowl. Stir well and adjust sriracha to taste for spiciness.
  7. Marinate Noodles: Place noodles in a large mixing bowl and pour the prepared sauce over them. Toss thoroughly ensuring all noodles are coated. Let noodles marinate for a few minutes to absorb the flavors.
  8. Soften Rice Paper Wrappers: One at a time, dip a rice paper wrapper in warm water for a few seconds until it’s slightly softened but not fully limp to avoid sogginess. Lay it flat on a clean, slightly damp surface.
  9. Assemble the Spring Rolls: Place a small handful of marinated noodles on the lower third of the softened rice paper. Add carrots, cabbage, green onions, and a few pieces of air-fried tofu on top. Avoid overfilling.
  10. Roll the Spring Rolls: Fold the bottom edge of the rice paper over the filling, then fold in the sides tightly. Continue rolling to form a neat, compact roll.
  11. Serve: Cut each roll in half diagonally. Serve immediately with chili lime sauce or spicy peanut sauce for dipping.
