Description

This Spicy Korean Cucumber Salad, known as Oi Muchim, is a quick and refreshing side dish perfect for summer picnics and gatherings. It features crisp cucumbers tossed in a spicy and savory Korean chili paste dressing with garlic, onions, and sesame flavors. Ready in just 10 minutes, it's an easy, healthy, and flavorful salad that can be enjoyed with any meal or prepared ahead for convenience.

Ingredients

Vegetables

  • 2 whole cucumbers
  • 0.5 onion, thinly sliced
  • 4 cloves garlic, minced

Seasonings & Sauces

  • 2 tbsp Korean chili paste (Gochujang)
  • 0.5 tbsp Korean chili flakes (Gochugaru)
  • 1 tsp salt
  • 1.5 tbsp sugar

Oils & Seeds

  • 1.5 tbsp sesame oil
  • 1 tbsp ground sesame seeds

Instructions

  1. Prepare the cucumbers: Cut each cucumber in half diagonally, then slice into bite-sized pieces to create a crisp texture that's easy to eat.
  2. Mix the dressing: In a large bowl, combine the Korean chili paste, Korean chili flakes, sesame oil, ground sesame seeds, sugar, minced garlic, and salt. Stir thoroughly to form a spicy and savory paste.
  3. Combine and massage: Add the thinly sliced onions and chopped cucumbers into the bowl with the dressing. Using your hands or a spoon, massage the mixture gently for 2-3 minutes until the cucumbers are well coated with the spicy paste, allowing the flavors to meld together.
  4. Adjust seasoning and serve: Taste the salad and add any additional salt or sugar if needed to balance the flavors. Serve immediately or refrigerate for up to 3 days for the flavors to deepen.

Notes

  • For extra crispiness, sprinkle a pinch of salt on the cucumbers and let them sit for 10 minutes before mixing to draw out excess moisture.
  • This salad can be made ahead and stored in the refrigerator for up to 3 days, making it perfect for meal prep.
  • Adjust the amount of Korean chili flakes and paste according to your preferred spice level.
  • Ground sesame seeds can be replaced with whole toasted sesame seeds if desired, for added texture.
  • Serve chilled for the best refreshing flavor, ideal for hot weather or as a side dish to Korean meals.
