Baked to moist perfection and finished with a smooth, colorful frosting, they bring a deliciously decadent treat that's ideal for any celebration or chocolate craving.

Ingredients

Brownie Batter

  • 5 oz (142g) bittersweet chocolate with 70% cocoa solids or extra dark 85% chocolate
  • 6 tablespoon (84g) unsalted butter
  • 2 large eggs, at room temperature
  • 1 cup (200g) granulated sugar
  • 1 teaspoon (5ml) pure vanilla extract
  • Heaped ¼ teaspoon salt
  • ⅓ cup plus 1 tablespoon (60g) all-purpose flour
  • Heaped ½ cup (100g) chopped mini eggs (plus extra for topping)

Frosting

  • 3 tablespoon (42g) unsalted butter, softened
  • 1 tablespoon (14g) coconut oil, softened
  • 1 cup (120g) powdered confectioner’s sugar
  • ½ teaspoon pure vanilla extract
  • Pinch of salt
  • 3 teaspoon (15ml) whole milk, at room temperature
  • 2 teaspoon (10ml) hot water
  • 1 teaspoon (2g) cocoa powder
  • Blue and green food coloring drops (2-3 drops blue, 1 drop green) for frosting color

Instructions

  1. Preheat and Prepare the Pan: Preheat your oven to 325°F (163°C). Line a 7x7-inch or 8x8-inch square metal baking pan with parchment paper, leaving a 2-inch overhang on each side. Secure the parchment with binder clips to ensure it stays in place. Using a 7-inch pan results in slightly thicker brownies.
  2. Melt Chocolate and Butter: In a large bowl placed over a pot of simmering water (double boiler method), stir together chocolate and butter until fully melted, smooth, and glossy. Alternatively, melt in the microwave in 20-second intervals, stirring between each. Keep warm without cooling.
  3. Whisk Eggs and Sugar: In a separate large bowl, combine eggs and sugar. Whisk until the mixture becomes pale, creamy, and slightly thickened, about 1-2 minutes. Avoid over-whipping to prevent forming a thin crust.
  4. Add Vanilla, Salt, and Chocolate Mixture: Mix vanilla extract and salt into the egg mixture. Then, gradually incorporate the warm chocolate mixture using a spatula or whisk until the batter turns glossy and well combined.
  5. Incorporate Flour and Mini Eggs: Sift flour to remove lumps and fold gently into the batter until smooth. Fold in the chopped mini eggs carefully to distribute evenly without deflating the batter.
  6. Bake the Brownies: Transfer the batter into the prepared pan, smoothing the surface with an offset spatula. Bake for 22-26 minutes until the brownies are slightly puffed and a toothpick inserted near the center comes out with moist crumbs. Be careful not to overbake.
  7. Cool Completely: Use the parchment paper overhang to lift the brownies out of the pan, then place on a wire rack and let them cool fully before frosting.
  8. Prepare the Frosting: In a medium bowl, vigorously mix softened butter, coconut oil, powdered sugar, vanilla extract, and salt until the frosting is light, smooth, and fluffy. Add milk one teaspoon at a time until you achieve a soft, spreadable consistency. Stir in blue and green food coloring drops carefully to create a pastel aqua color.
  9. Frost the Brownies: Spread the frosting evenly over the cooled brownies immediately. Sprinkle additional chopped mini eggs on top for garnish.
  10. Create Cocoa Speckles: Combine cocoa powder and hot water in a small bowl, whisking until smooth. Dip the tip of a dry pastry or clean paintbrush into the cocoa mixture, shake off excess, and flick the bristles about 5 inches above the frosted brownies to create a speckled pattern. Repeat as desired. Perform this step over a protected surface and wear an apron as it can be messy.
  11. Serve: Slice the brownies using a hot, dry knife for clean cuts and enjoy!

Notes

  • If you prefer thicker brownies, use the 7x7-inch pan instead of 8x8-inch.
  • Do not overwhip the egg and sugar mixture to avoid a crusty brownie surface, which may cause frosting separation.
  • Use binder clips to keep parchment paper tightly secured to the pan for easier removal.
  • Adjust the food coloring drop quantities slowly to achieve your desired pastel shade.
  • Be cautious while speckling to avoid staining surrounding areas; cover your workspace and wear an apron.
  • Ensure the knife is hot and dry when slicing to prevent the frosting from smearing.
