Ingredients
Blueberry Syrup
- 2 cups water
- 3/4 cup blueberries (fresh or frozen)
- 2 Tbsp roughly chopped fresh rosemary (woody stems removed)
- 3 Tbsp finely chopped fresh ginger
- 1/4 cup maple syrup
- 1/4 cup lemon juice
Sparkling Mocktail
- Ice cubes
- 1/4 cup blueberry syrup (plus more to taste)
- 1/2 cup sparkling water*
- Few dashes of orange bitters (optional, to elevate and round the flavors)
Instructions
- Make Blueberry Syrup: In a small saucepan, combine the water, blueberries, rosemary, and ginger. Bring the mixture to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for 20 minutes until the blueberries have lost most of their color and the mixture is dark and fragrant.
- Strain and Sweeten Syrup: Strain the blueberry mixture through a fine mesh sieve into a measuring cup or jar to remove solids. Stir in the maple syrup and lemon juice until fully combined. Set the syrup aside to cool slightly.
- Prepare Sparkling Mocktail: When ready to serve, fill glasses with ice cubes. Pour 1/4 cup of the blueberry syrup into each glass, then top with approximately 1/2 cup sparkling water. Add more blueberry syrup or sparkling water to adjust sweetness and flavor to your taste. For an optional flavor boost, add a few dashes of orange bitters. Stir gently to combine and enjoy immediately.
- Storage: Store any leftover blueberry syrup in an airtight container in the refrigerator for up to 1 week, or freeze in ice cube trays and transfer frozen cubes to a sealed container for up to 1 month.
