Ingredients

Pasta

  • 1 lb (450 grams) spaghetti or other long pasta

Sauce

  • 1/2 cup (120 ml) extra virgin olive oil
  • 4-5 garlic cloves, finely sliced
  • 1 tsp dried chili flakes, or to taste (or 3 fresh chilies, seeded and finely chopped)
  • 1/4 cup fresh parsley, coarsely chopped
  • 1/4 cup grated parmesan cheese, plus more to serve (optional, omit for vegan)
  • Salt, to taste


Instructions

  1. Cook the Spaghetti: Bring a pot of salted water to a boil. Add the spaghetti and cook until al dente—tender but still slightly firm to the bite.
  2. Prepare the Aromatics: While the pasta cooks, peel and finely slice the garlic cloves. If using fresh chilies instead of flakes, remove the seeds and finely chop them.
  3. Infuse the Olive Oil: Gently heat the olive oil in a frying pan over low to medium heat. Add the garlic and chili (flakes or fresh) and cook carefully until the garlic turns a pale golden color, allowing the flavors to infuse without burning the garlic. Stir in the chopped parsley.
  4. Drain the Pasta: Reserve 1/2 cup of pasta cooking water, then drain the spaghetti once al dente.
  5. Toss Spaghetti in Sauce: Add the drained spaghetti to the frying pan with the infused oil. Stir well to coat the pasta. Add the reserved starchy cooking water as needed to keep the pasta moist and juicy. Cook on medium heat for about 30 seconds, stirring occasionally.
  6. Serve: Sprinkle with extra chopped parsley and grated parmesan cheese if desired. Adjust salt to taste and serve immediately for the best flavor.

Notes

  • Be careful not to burn the garlic as it will turn bitter and affect the sauce flavor.
  • You can adjust the amount of chili flakes or fresh chilies based on your heat preference.
  • For a vegan version, omit the parmesan cheese or use a vegan cheese alternative.
  • If the sauce looks dry after adding the pasta, add a little more reserved pasta water to achieve a silky texture.
