Ingredients

Dough

  • 1 cup (5 oz) all purpose or white whole wheat flour (Cup 4 Cup flour for gluten free)
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon kosher salt
  • 1 cup non-fat Greek yogurt (not regular, drained if there's any liquid)
  • Olive oil spray
  • Everything Bagel Seasoning (to sprinkle around the edge)

Toppings

  • 1/2 red onion (peeled and sliced into thin strips)
  • 1 tablespoon extra virgin olive oil
  • 2 ounces (1/2 cup) 1/3 less fat cream cheese
  • 1 beefsteak tomato (sliced thin)
  • 4 ounces smoked salmon or nova lox
  • 2 tablespoons capers (drained)
  • Fresh dill (for garnish)


Instructions

  1. Preheat Oven and Prepare Baking Sheet: Preheat your oven to 450°F. Place a silicone liner on a large baking sheet or spray the surface with oil if using parchment paper to prevent sticking.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, and kosher salt until well combined.
  3. Add Yogurt and Form Dough: Add the non-fat Greek yogurt to the dry ingredients and mix with a fork or spatula until the mixture forms small crumbles.
  4. Knead the Dough: Lightly dust a work surface with flour. Transfer the dough from the bowl onto the surface and knead it about 20 times until tacky but not sticky. The dough should pull away cleanly from your hands.
  5. Divide Dough: Divide the kneaded dough into 4 equal balls, each about 3 to 3⅜ ounces.
  6. Roll Out Flatbreads: Lightly flour a work surface and rolling pin, then roll each dough ball into an oval shape approximately 7 to 8 inches in diameter. Place rolled dough onto the prepared baking sheet.
  7. Add Olive Oil and Seasoning: Lightly spritz the dough with olive oil spray. Sprinkle everything bagel seasoning in a 1-inch border around the edge of each flatbread.
  8. Prepare Onion Topping: Toss half of the sliced red onion with 1 tablespoon of extra virgin olive oil and scatter the onions in the center of each flatbread.
  9. Bake Flatbreads: Place the baking sheet in the preheated oven and bake for 10 to 14 minutes, or until the crust is golden and crisp.
  10. Add Cream Cheese: Remove flatbreads from the oven and dollop cream cheese in the center of each, leaving the edges clear.
  11. Top with Tomato, Salmon, Capers, and Dill: Layer thin slices of beefsteak tomato on top of the cream cheese, then add smoked salmon. Finally, sprinkle with capers and garnish with fresh dill.

Air Fryer Directions:

  1. Preheat Air Fryer: Preheat the air fryer to 400°F.
  2. Cook Flatbreads in Air Fryer: Place rolled dough pieces in the air fryer basket and bake for 5 to 6 minutes, turning once halfway through, until firm and golden. Repeat with remaining dough.

  • For a gluten-free option, substitute all-purpose flour with Cup 4 Cup gluten-free flour.
