- 5 habanero peppers, halved, stems and seeds removed
- 1 medium onion, peeled and quartered
- 3 cloves garlic, peeled
Sauce Base
- 1/4 cup brown sugar
- 1/2 cup lemon juice
- 1/2 cup apple cider vinegar
- 1/2 cup water
- 2 teaspoons kosher salt
- 1/4 teaspoon dried ginger
Instructions
- Prepare the smoker and ingredients: Preheat the smoker to 250°F. Wash all vegetables thoroughly. Peel and halve the peaches, removing pits. Peel the onion and garlic. Halve habanero peppers and remove stems and seeds. Quarter the onion.
- Smoke the produce: Place the peaches, onions, garlic, and habanero peppers on a smoker mat or fine grill tray. Transfer to the preheated smoker and smoke for 30 minutes to infuse a deep smoky flavor.
- Prepare the sauce base: While smoking, combine apple cider vinegar, lemon juice, water, brown sugar, kosher salt, and dried ginger in a large saucepan. After 20 minutes of smoking have passed, warm the mixture over medium heat and bring to a light boil for 3 minutes.
- Combine smoked ingredients with sauce base: Add the smoked peaches, onions, garlic, and habanero peppers to the saucepan. Bring the mixture back to a boil and cook for 5 more minutes to meld flavors.
