Instructions
- Cook Bacon: In a skillet over medium-high heat on the stovetop, cook the 6 slices of bacon until crisp. Drain excess fat and transfer the crispy bacon to the slow cooker.
- Cook Sausage: Using the same skillet with bacon drippings, cook and crumble 1 pound of mild pork sausage until fully browned. Add the cooked sausage to the slow cooker.
- Add Remaining Ingredients: To the slow cooker, add 4 cups diced russet potatoes, 1 cup diced white onion, ¼ teaspoon salt, ¼ teaspoon pepper, 1 teaspoon dried basil, ½ teaspoon dried thyme, 2 teaspoons minced garlic, and 32 ounces of chicken broth. Stir gently.
- Slow Cook Soup: Cover the slow cooker and cook on LOW for 7 hours or on HIGH for 4 hours, allowing flavors to meld and potatoes to soften.
