Description

This Slow Cooker Peanut Chicken recipe is a delicious and easy-to-make dish combining tender chicken breasts slow-cooked in a creamy, savory peanut sauce with a hint of spice and fresh lime. Perfect for a comforting weeknight meal, it features simple ingredients and requires minimal hands-on time.

Ingredients

Main Ingredients

  • 1.5 lb chicken breasts
  • 1 red bell pepper, diced
  • 1/2 large yellow onion, diced
  • 2 garlic cloves, chopped

Peanut Sauce

  • 1/2 cup peanut butter (creamy or crunchy with minimal ingredients)
  • 1/2 cup chicken broth
  • 1/4 cup soy sauce
  • 1 tbsp honey
  • 1 tsp sesame oil
  • 1 tsp chili garlic paste

Finishing Touches

  • 1 tbsp lime juice
  • 2 tbsp cilantro, chopped

Instructions

  1. Prepare the vegetables and chicken: Add the diced red bell pepper, diced yellow onion, and chopped garlic to the bottom of your slow cooker. Place the chicken breasts on top of the vegetables evenly.
  2. Make the peanut sauce: In a bowl or glass measuring cup, whisk together the peanut butter, chicken broth, soy sauce, honey, sesame oil, and chili garlic paste until smooth and well combined.
  3. Cook the chicken: Pour the prepared peanut sauce over the chicken breasts in the slow cooker. Cover with the lid and cook on HIGH for 2 to 3 hours, or on LOW for 4 to 5 hours, until the chicken is cooked through and tender.
  4. Finish and serve: Remove the slow cooker lid, then stir in the lime juice and chopped cilantro to brighten the flavors. Serve the peanut chicken hot, ideally over rice or noodles, and enjoy!

Notes

  • Use creamy peanut butter for a smooth sauce or crunchy for added texture.
  • Adjust chili garlic paste quantity to your preferred spice level.
  • Cooking times may vary slightly depending on your slow cooker model.
  • For a gluten-free option, use tamari or a gluten-free soy sauce.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated gently.
