Ingredients
Beef and Sauce
- 2 lbs chuck roast, cut into bite size pieces
- 1/2 cup light brown sugar
- 1/2 cup low sodium soy sauce
- 6 cloves garlic, minced
- 2 tsp ginger, minced
- 1 tbsp sesame oil
- 2 tbsp rice vinegar
- 2 tsp Sriracha (or more to taste)
Thickening Mixture
- 1-2 tbsp cornstarch
- 1/4 cup liquid from slow cooker
Garnishes (optional)
- Green onions
- Sesame seeds
Instructions
- Prepare the sauce. In a medium bowl, whisk together the brown sugar, low sodium soy sauce, minced garlic, minced ginger, sesame oil, rice vinegar, and Sriracha until well combined.
- Add beef to slow cooker. Place the cubed chuck roast into the slow cooker and pour the prepared sauce over the meat. Stir to coat the beef evenly with the sauce.
- Slow cook the beef. Cover the slow cooker and set it to low heat. Cook for 8 hours to allow the beef to become tender and fully infused with the flavors. Avoid cooking on high heat to prevent tough meat.
- Thicken the sauce. After cooking, mix 1 to 2 tablespoons of cornstarch with 1/4 cup of the cooking liquid taken from the slow cooker. Start with 1 tablespoon; add more if a thicker sauce is desired.
- Incorporate thickening mixture. Pour the cornstarch slurry back into the slow cooker and increase the heat to high. Cook for an additional 30 minutes, stirring occasionally, until the sauce thickens.
- Serve and garnish. Serve the Korean beef immediately, garnished with chopped green onions and sesame seeds if desired, over steamed rice or noodles for a complete meal.
Notes
- For best texture, cook the beef on low heat rather than high.
- The Sriracha amount can be adjusted based on preferred spice level.
- Use low sodium soy sauce to control saltiness.
- The sauce can be thickened to your liking using cornstarch; start with less and add more if needed.
- Optional garnishes like green onions and sesame seeds add extra flavor and texture.
