- 1/3 cup milk of choice (80g)
- 1 Tbsp oil of choice (canola, melted coconut oil, olive oil, etc.)
- 1.5 tsp vanilla extract
Dry Ingredients
- 1/2 cup oat flour (60g) recommended, or all-purpose or gluten-free flour
- 1/4 cup vanilla protein powder (30g) or more flour
- 1 Tbsp baking powder
- 1 tsp cinnamon
- 1/4 tsp salt
Add-ins
- 1/4 cup mini chocolate chips (40g)
Instructions
- Preheat the oven: Preheat your oven to 350°F (175°C). Line a 9x4" baking loaf pan with parchment paper and spray it lightly with cooking spray to prevent sticking.
- Mash and mix wet ingredients: In a medium-sized mixing bowl, mash the overripe banana with a fork until smooth. Add the golden monk fruit sweetener, milk, oil, and vanilla extract. Whisk everything together until well combined.
- Add dry ingredients: Gradually add the oat flour, vanilla protein powder, baking powder, cinnamon, and salt to the wet mixture. Stir gently until all dry ingredients are incorporated, being careful not to overmix to keep the bread tender.
- Fold in chocolate chips: Fold half of the mini chocolate chips into the batter to distribute them evenly.
- Prepare for baking: Pour the batter into the prepared loaf pan and spread it out evenly. Sprinkle the remaining chocolate chips over the top for a nice finish and extra chocolate flavor.
- Bake: Bake the banana bread in the preheated oven for 30-40 minutes or until a toothpick inserted into the center comes out mostly clean with a few moist crumbs.
