Description

Instructions

  1. Prepare Potatoes: Dice the potatoes into half inch cubes and place them in a bowl of cold water to remove excess starch. No need to peel if using Yukon gold or other thin-skinned varieties. Drain and thoroughly dry the potatoes using a clean kitchen towel.
  2. Slice Onions: Peel and thinly slice the onion into strips.
  3. Heat Skillet and Oil: Place a cast iron skillet or heavy-duty frying pan over medium heat and add the avocado oil. Heat until the oil begins to shimmer.
  4. Cook Potatoes: Carefully add the dried diced potatoes in a single layer to the hot oil. Let them cook undisturbed for about 3 minutes to allow a crust to form, then stir gently.
  5. Brown Potatoes: Continue cooking for another 6 to 8 minutes, stirring every 2 minutes, until the potatoes are mostly golden brown on all sides.
  6. Add Onions and Season: Add the thinly sliced onions to the skillet and season with salt and black pepper. Stir together to combine the potatoes and onions evenly.
  7. Caramelize Onions: Reduce the heat slightly and cook for about 5 more minutes, stirring occasionally, until the onions are softened and caramelized.
  8. Serve: Remove from heat and serve the skillet fried potatoes and onions warm as a delicious side dish.

  • Soaking diced potatoes in cold water helps remove starch and prevents them from sticking together while frying.
