Ingredients
Shrimp
- 2 Tablespoons avocado oil
- 1 ½ pounds raw large shrimp, shelled, deveined, and tails removed

- 1 teaspoon chili powder

- Kosher salt and freshly ground black pepper, to taste
Rice and Beans
- 3-4 cups prepared cilantro lime rice
- 2 cups refried beans
Toppings
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped (or spicy pickled onions)
- 1/2 cup shredded Mexican cheese
- 1 avocado, sliced or diced
- Chips, for serving
- Salsa, for serving
Instructions
- Make refried beans: Prepare your favorite homemade refried beans or use store-bought. Set aside warm.
- Make cilantro lime rice: Cook rice according to your preferred method and stir in fresh lime juice and chopped cilantro to taste. Keep warm.
- Prep shrimp: Remove shells and tails from the shrimp if not already done. Devein the shrimp. In a bowl, toss shrimp with ground cumin, chili powder, onion powder, kosher salt, and freshly ground black pepper until evenly coated.
- Sauté shrimp: Heat a large cast iron skillet over medium-high heat. Add avocado oil and heat until shimmering.
