Ingredients

Pasta

  • 14 oz (400g) linguine
  • 1/2 cup (125ml) reserved pasta water
  • Lemon wedges (for serving)

Shrimp and Sauce

  • 5.6 oz (160g) raw jumbo shrimp, deveined
  • 14 oz (400g) cherry tomatoes, cut in half
  • 1/2 fresh red chili, finely chopped
  • 1 banana shallot, finely chopped
  • 2 cloves garlic, finely chopped
  • 1/4 cup (60ml) white wine
  • 1 tbsp olive oil
  • Fresh parsley (for serving)
  • Splash of reserved pasta water (about 1/4 cup or 60ml)


Instructions

  1. Cook the linguine: Bring a large pot of salted water to a boil and cook the linguine according to the packet instructions until al dente. Before draining, reserve 1/2 cup (125ml) of the pasta cooking water for later use.
  2. Sauté aromatics: While the pasta cooks, heat 1 tbsp of olive oil in a large pan over medium heat. Add the finely chopped garlic, banana shallot, and fresh red chili. Sauté gently for 1-2 minutes until the shallots and garlic become soft and translucent, taking care not to brown them.
  3. Cook the tomatoes: Add the halved cherry tomatoes to the pan and cook for around 5 minutes until the tomatoes soften and release their juices, forming a saucy base.
  4. Add wine and shrimp: Pour in 1/4 cup (60ml) white wine and let it simmer until reduced by half, maintaining a saucy consistency. Add the raw jumbo shrimp and cook, stirring occasionally, until they turn pink and are cooked through, about 3-4 minutes. Then add a splash (about 1/4 cup or 60ml) of the reserved pasta water to loosen the sauce.
  5. Toss pasta and serve: Add the drained linguine to the pan and toss well to combine all ingredients and coat the pasta in the sauce. Sprinkle with freshly chopped parsley and serve immediately, accompanied by fresh lemon wedges for squeezing over.

Notes

  • Make sure not to overcook the shrimp; they should be pink and opaque but still tender.
  • The reserved pasta water helps to bind the sauce and pasta together for a silky texture.
  • Adjust chili quantity to your preferred heat level or omit for a milder dish.
