  • 8 ounces whole wheat penne, cooked according to package instructions
  • 2 large heads broccoli, cut into florets (about 4 cups)

  • 1 teaspoon salt
  • ½ teaspoon pepper

Instructions

  1. Cook Pasta and Broccoli: Cook the whole wheat penne pasta according to package instructions. During the last 3 to 4 minutes of cooking, add the broccoli florets to the pot. Once both are tender, drain and set aside.
  2. Prepare the Shrimp: Pat the raw shrimp dry with paper towels. Sprinkle evenly with salt and pepper to season.
  3. Sauté Garlic and Shrimp: Heat 2 tablespoons of the olive oil in a large, deep skillet over medium-high heat. Add the grated garlic and cook for about 30 seconds until aromatic. Add the seasoned shrimp to the skillet.
  4. Cook Shrimp: Sauté the shrimp until they turn pink and are cooked through, about 3-4 minutes total, taking care not to overcook them.
  5. Toss Pasta and Broccoli with Shrimp: Add the cooked penne and broccoli back into the skillet with the shrimp. Stir in the remaining 2 tablespoons olive oil, lemon zest, and lemon juice. Toss everything well to combine, adjusting salt and pepper to taste.
  6. Serve: Plate the pasta and top with parmesan cheese, minced herbs (parsley or basil), and sprinkle with red chili flakes if desired.
