Instructions

  1. Preheat and Season: Preheat your oven to 325 degrees F. Season the beef chuck roast generously on both sides with Kinder’s Carne Asada Rub. Place the roast in a Dutch oven along with the beef stock, orange juice, and quartered onions.
  2. Initial Bake and Shred: Cover the Dutch oven with its lid and bake the roast for 3.5 hours until the meat is tender. Remove the roast from the oven and shred it into large chunks, mixing it with the cooking juices and onions. Return it to the oven for another 30 minutes to further infuse the flavors.
  3. High Heat Caramelization: Increase the oven temperature to 425 degrees F. Transfer the shredded meat and onions onto a baking sheet, sprinkle a bit more of the carne asada seasoning on top, and bake for an additional 15 to 20 minutes until the meat is nicely caramelized and crispy on the edges.
  4. Serve: Warm the flour tortillas. Serve the shredded beef with tortillas, guacamole, salsa, and chopped cilantro for a fresh, vibrant meal.
