Description

This recipe for Sautéed Spinach, Mushrooms, and Caramelized Onions delivers a rich, creamy vegetable side dish with deeply flavorful caramelized onions, tender mushrooms, and wilted spinach all finished in a luscious Parmesan half-and-half sauce. Perfect as a savory complement to any main course, this dish combines stovetop sautéing and slow caramelizing techniques to develop complex, comforting flavors within 40 minutes.

Ingredients

Caramelized Onions

  • 1 tablespoon olive oil
  • 3 large yellow onions, sliced
  • 1/4 teaspoon salt (divided)
  • 1 tablespoon balsamic vinegar

Mushrooms and Spinach

  • 1 tablespoon olive oil
  • 10 oz button mushrooms, sliced
  • 6 oz fresh spinach
  • Pinch of salt

Creamy Sauce

  • 1 cup half-and-half
  • 1 cup Parmesan cheese, shredded (divided: 2/3 cup + extra as needed)
  • 1/4 teaspoon salt

Instructions

  1. Caramelize Onions: Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the sliced onions and cook on high, stirring constantly for about 10 minutes until they start to brown without burning. Lower the heat to medium and continue cooking for another 10 minutes, stirring continuously. Add a pinch of salt and cook for an additional 10 minutes on medium or low heat, stirring occasionally to prevent sticking or burning, until the onions are deeply browned and caramelized.
  2. Deglaze Pan: Remove the skillet from heat and sprinkle the onions with 1 tablespoon balsamic vinegar. Use a spatula to stir and scrape up any browned bits from the pan bottom, thoroughly coating the onions. Transfer the caramelized onions to a plate and set aside.
  3. Cook Mushrooms: In the same skillet, heat 1 tablespoon olive oil over medium heat. Add the sliced mushrooms and a pinch of salt. Cook for about 5 minutes, stirring occasionally, until mushrooms soften and release their moisture.
  4. Add Spinach: Add the fresh spinach to the mushrooms and stir gently over low heat just until the spinach starts to wilt.
  5. Make Creamy Sauce: Pour 1 cup half-and-half into the skillet with mushrooms and spinach, and raise heat to bring to a quick boil. Immediately reduce heat to a simmer. Add 2/3 cup shredded Parmesan cheese and 1/4 teaspoon salt, stirring constantly until the cheese completely melts to form a creamy sauce.
  6. Combine with Onions: Stir the reserved caramelized onions back into the skillet. Adjust sauce consistency by adding a little more half-and-half if too thick, or extra Parmesan cheese if too thin, stirring until desired texture is reached and heated through.

Notes

  • Use medium heat and stir frequently when caramelizing onions to avoid burning and ensure even browning.
  • Balsamic vinegar adds a subtle tang and helps to deglaze the pan, picking up flavorful browned bits.
  • Fresh spinach should only be wilted briefly to preserve its bright color and nutrients.
  • This dish pairs well with grilled meats, roasted chicken, or as a hearty vegetarian main when paired with grains or pasta.
  • Substitute half-and-half with cream or milk for different richness levels.
