Ingredients
Beef Marinade and Skewers
- 1 lb Tri tip or sirloin steak tip, cut into 1-inch cubes
- 3 large scallions, cut into 1-inch pieces
- 6 oz Cremini or baby bella mushrooms (about six large mushrooms, halved or quartered)
- 1/3 cup low sodium soy sauce
- 1/4 cup honey
- 2 TBSP hoisin sauce
- 1 TBSP sesame oil
- 1 TBSP freshly grated ginger
- 1 tsp Sriracha
- 4 cloves garlic, grated to a paste or finely minced
Korean BBQ Sauce
- 1/3 cup hoisin sauce
- 1/3 cup ketchup
- 2 TBSP low sodium soy sauce
- 1 TBSP mirin (or rice wine vinegar)
- 2 tsp sesame oil
- 1 tsp Sriracha, adjust to taste
Instructions
- Prepare the Marinade: In a large mixing bowl, whisk together soy sauce, honey, hoisin sauce, sesame oil, grated ginger, Sriracha, and garlic paste until fully combined, creating the marinade base.
- Marinate the Beef: Add the bite-sized beef cubes and mushrooms to the marinade. Toss everything thoroughly to ensure the beef and mushrooms are evenly coated. Cover the bowl and refrigerate for at least 2 hours, or up to a full day to enhance flavor and tenderness.
- Make the Korean BBQ Sauce: Before grilling, combine hoisin sauce, ketchup, soy sauce, mirin, sesame oil, and Sriracha in a small saucepan. Whisk to combine, then bring to a low simmer over medium heat. Let it simmer gently for about 5 minutes to meld the flavors. Remove from heat and set aside, keeping it warm for serving.
- Preheat the Grill: Heat your grill to medium-high, approximately 450º F, ensuring the grill grates are clean to prevent sticking and promote even cooking.
