Ingredients

Salmon and Seasoning

  • 2 Salmon Fillets (about 4 oz. / 115 g each)
  • 1 tsp Dijon Mustard
  • 1 tsp Everything Bagel Seasoning
  • 1/2 tsp Smoked Paprika

Salad Base

  • 6 cups chopped Kale Leaves (packed)
  • 2 tsp Extra Virgin Olive Oil
  • Pinch Salt
  • 2 tsp fresh Lemon Juice
  • 1/4 cup chopped Red Onion (or Green Onion)

Toppings

  • finely grated Parmesan Cheese (to taste, for topping)
  • 1 medium Avocado (sliced, for topping)

Bagel Croutons

  • 1/2 Everything Bagel
  • 1 tbsp Extra Virgin Olive Oil
  • 1 tsp Everything Bagel Seasoning

Greek Yogurt Caesar Dressing

  • 1/3 cup plain Greek Yogurt
  • 3 tbsp Mayonnaise (like Duke's or Hellmann's)
  • 1 clove Garlic (minced, grated, or pressed)
  • 1 tsp Worcestershire Sauce
  • 2 tsp fresh Lemon Juice
  • 1 tsp White Miso Paste
  • 1/4 cup finely grated Parmesan Cheese (use the good quality)
  • 1 tsp Dijon Mustard
  • 1/4 tsp Salt (plus more to taste)
  • 1/4 tsp freshly cracked Black Pepper
  • 1 tbsp Extra Virgin Olive Oil

Instructions

  1. Set Out the Salmon Fillets: Remove the salmon fillets from the refrigerator and let them sit at room temperature for about 15 minutes to ensure even cooking while you prepare the dressing.
  2. Make the Greek Yogurt Caesar Dressing: In a small bowl, combine the minced garlic, fresh lemon juice, and salt. Let this mixture rest for 10 minutes to mellow the raw garlic flavor. Then mash in the white miso paste and Worcestershire sauce until fully blended. Whisk in the Dijon mustard, Greek yogurt, mayonnaise, olive oil, and freshly cracked black pepper. Taste and adjust seasoning if needed, then cover and refrigerate until ready to use.
  3. Prep the Salmon: Preheat your oven to 350°F (175°C). Place the salmon fillets on a small rimmed baking sheet and pat them dry with paper towels. Spread 1/2 teaspoon of Dijon mustard evenly over each fillet. In a small bowl, mix together the everything bagel seasoning and smoked paprika, then sprinkle this mixture over the tops of the salmon fillets. Set aside briefly.
  4. Prep the Bagel Croutons: Cut half of an everything bagel into 1/2-inch bite-sized pieces. In a small bowl, toss these bagel pieces with 1 tablespoon of olive oil and 1 teaspoon of everything bagel seasoning. Spread the seasoned bagel pieces evenly on a small rimmed baking sheet and set aside.
  5. Bake the Croutons and Salmon: Place both baking sheets with the salmon and bagel croutons into the preheated oven. Bake the croutons for 8 to 10 minutes, until they turn golden brown and crunchy. Bake the salmon fillets for 11 to 14 minutes, depending on thickness, until cooked to your preferred doneness.
  6. Massage the Kale: Place the chopped kale in a large bowl. Add 2 teaspoons of extra virgin olive oil, 2 teaspoons of fresh lemon juice, and a pinch of salt. Using your hands, massage the kale for about one minute until the leaves become tender and slightly wilted.
  7. Build Your Salmon Kale Salads: Divide the massaged kale between two bowls. Top each bowl with a baked salmon fillet, bagel croutons, sliced avocado, chopped red onion, and a generous drizzle of the Greek yogurt Caesar dressing. Finish by grating additional Parmesan cheese over the top using a microplane. Serve immediately and enjoy!

Notes

  • Allowing the salmon to come to room temperature before baking helps ensure even cooking and prevents overcooking the exterior.
  • Massaging kale softens its tough fibers and makes it more palatable in salads.
  • The everything bagel seasoning used on both the salmon and croutons adds a delightful burst of flavor and texture.
  • Adjust the amount of salt and pepper in the dressing to your taste preference, especially if your Worcestershire sauce or miso paste is salty.
  • Use a high-quality Parmesan for both the dressing and topping to elevate the flavor.
  • This recipe can be doubled easily for more servings.
