Enhanced with a touch of honey, lemon, and fresh thyme, this easy yet elegant recipe makes a perfect light breakfast or a flavorful snack in just 30 minutes.
Ingredients
Strawberries and Toppings
- 1 pound strawberries, ends removed
- 2 tablespoons honey
- ½ lemon, juiced
- 4 sprigs fresh thyme, plus extra for garnish
Bread and Ricotta
- 2 slices rustic bread, 1-inch thick
- 1 tablespoon olive oil
- ¾ cup whole milk ricotta cheese
- Pinch of sea salt
Instructions
- Preheat the oven: Set your oven to 400 degrees Fahrenheit to prepare for roasting the strawberries and toasting the bread.
- Roast the strawberries: Place the cleaned strawberries in a medium baking dish and drizzle them with honey. Squeeze the juice of half a lemon over the berries and scatter the thyme sprigs on top. Roast in the oven for 20 minutes, stirring halfway through to ensure even cooking. Remove and allow to cool.
- Toast the bread: Drizzle olive oil over each slice of the rustic bread and place them in the oven for about 1 minute until they become lightly toasted.
- Whip the ricotta: Transfer the ricotta cheese to a food processor and pulse for 30 seconds to one minute until it becomes light and fluffy in texture.
- Assemble the toast: Spread the whipped ricotta evenly between the two slices of toasted bread to create a creamy layer. Generously spoon the roasted strawberries over the ricotta. Finish by sprinkling additional fresh thyme and a pinch of sea salt on top. Serve immediately for the best flavor and texture.
Notes
- Use ripe but firm strawberries to ensure they hold shape during roasting.
- If you don’t have a food processor, whisk the ricotta vigorously for a few minutes to make it fluffy.
- Thyme adds a subtle herbaceous note, but you can substitute with fresh basil for a different flavor profile.
- The bread can be substituted with gluten-free bread to accommodate dietary needs.
- For a vegan variation, use a plant-based ricotta alternative and maple syrup instead of honey.
