Ingredients
Vegetable and Seasoning Mixture
- 1 medium onion (finely chopped; 4 oz./110g)
- 4 cloves minced garlic
- 1 tablespoon tomato paste
- 5 sun dried tomatoes (minced)
- 1 ¼ teaspoon salt
- ¼ teaspoon fresh ground pepper
- 1 teaspoon dried Italian herb seasoning
- ½ teaspoon dried thyme
- ½ teaspoon dried basil
- ¼ cup olive oil
Vegetables
- 3 cups cherry tomatoes
- 2 cups zucchini (diced)
- 2 cups eggplant (diced)
Pasta and Garnish
- 8 ounces spaghetti
- ¼ cup fresh basil (julienned)
- ¼ cup fresh parsley (chopped)
- ¼ cup grated Parmesan cheese
Instructions
- Prepare the seasoning mixture: Preheat your oven to 400°F (200°C). In a large mixing bowl, combine the finely chopped onion, minced garlic, tomato paste, minced sun-dried tomatoes, salt, fresh ground pepper, dried Italian herb seasoning, dried thyme, dried basil, and olive oil. Mix thoroughly to create a well-seasoned base for the vegetables.
- Toss the vegetables: Add the cherry tomatoes, diced zucchini, and diced eggplant to the seasoning mixture. Toss everything together until the vegetables are completely coated by the seasoned oil and herbs.
- Roast the vegetables: Line a sheet pan with parchment paper and spread the vegetable mixture evenly on it. Place the pan in the preheated oven and roast for 45 minutes. Stir the vegetables once halfway through the roasting process to ensure even cooking and caramelization.
- Cook the pasta: While the vegetables roast, bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Drain the pasta, reserving a little pasta cooking water.
- Combine and serve: Toss the cooked spaghetti with the roasted ratatouille vegetables, fresh julienned basil, and chopped parsley. If needed, add a small amount of reserved pasta water to loosen the sauce and bring everything together. Serve the pasta warm, topped with grated Parmesan cheese for a perfect finish.
