Potatoes
- 2 pounds red-skinned potatoes
Roasted Garlic
- 1 head fresh garlic
- Olive oil, for drizzling

Mash Ingredients
- 1/4 cup butter
- 1/3 cup whole milk
- 1/4 cup sour cream
- Salt and pepper to taste

Instructions
- Roast the Garlic: Slice off the top 1/2 inch from a whole head of garlic to expose the cloves. Drizzle with olive oil and sprinkle with salt. Place it on a baking sheet and roast at 400°F (200°C) for 30-40 minutes until the garlic becomes soft and caramelized.
- Cook the Potatoes: While the garlic is roasting, peel or wash the red-skinned potatoes and cut them into quarters. Place the potatoes in a large pot of cold water ensuring they are fully submerged. Bring the pot to a boil on the stovetop and cook for 15-20 minutes until the potatoes are fork tender.
- Prepare Butter and Milk Mixture: Once potatoes are cooked, drain them in a strainer. Return the empty pot to medium-low heat and gently warm the butter and milk together – this helps to keep the mixture warm and incorporate better with the potatoes.
- Mash the Potatoes and Add Ingredients: Carefully transfer the drained potatoes back into the pot with the warm butter and milk. Squeeze the soft roasted garlic cloves from their skins directly into the potatoes. Using a potato masher, mash everything together until smooth and creamy.
- Finish and Serve: Stir in the sour cream. Add salt and pepper to taste and mix well. Garnish with freshly chopped chives and serve the mashed potatoes hot.

- For a richer flavor, use heavy cream instead of whole milk.
- To peel the roasted garlic easily, press the cloves from the bottom of the bulb before squeezing them out.
- You can substitute Greek yogurt for sour cream for a tangier taste and added protein.
- This recipe can be prepared ahead; reheat gently on the stovetop or microwave, stirring occasionally.
- Red-skinned potatoes retain their color and texture well, but Yukon Gold potatoes can be used for creamier mashed potatoes.
