Ingredients

Roasted Tomatoes

  • 18 oz cherry tomatoes
  • 1 garlic bulb (top sliced off)

  • 1 cup olive oil (+ 2 tbsp extra)
  • Salt and pepper, to taste

Whipped Goat Cheese

  • 11 oz goat cheese
  • 2 tbsp lemon juice
  • 1 tbsp lemon zest
  • 1 tbsp olive oil (reserved from roasting pan)

Toasted Sourdough

  • 4 slices sourdough
  • 2 tbsp olive oil (for drizzling)

Finishing Touches

  • 1 tbsp honey
  • Fresh thyme for garnish


Instructions

  1. Preheat oven: Preheat your oven to 160°C (320°F) to prepare for slow roasting the tomatoes and garlic, which will bring out their natural sweetness and depth of flavor.
  2. Roast tomatoes: Place the cherry tomatoes, garlic bulb (with the top sliced off), fresh thyme leaves, and 1 cup of olive oil into a large roasting dish. Season with salt and pepper. Roast in the preheated oven for 50 minutes until the garlic is caramelized and the tomatoes have burst slightly, concentrating their flavors.
  3. Squeeze garlic: Remove the roasting dish from the oven and let the garlic cool just enough to handle safely. Squeeze out the soft, sweet roasted garlic cloves from the bulb into a bowl or directly into the food processor.
  4. Whip goat cheese: In a food processor, combine the roasted garlic, goat cheese, lemon juice, lemon zest, and about 1 tablespoon of the olive oil from the roasting pan. Blend until the mixture is smooth and creamy, creating a luscious whipped cheese perfect for spreading.
  5. Toast sourdough: Drizzle the remaining 2 tablespoons of olive oil evenly over the sourdough slices. Heat a large frying pan over medium-low heat and toast the bread for about 4 minutes on each side, or until golden and crispy, adding a pleasant crunch to the dish.
