This refreshing Mung Bean Milk recipe combines nutritious mung beans with creamy milk and a hint of mint for a unique and delicious beverage. Cooked gently on the stovetop, the mung beans are simmered to perfection, then blended with milk, fresh mint, and a touch of sugar to create a smooth, mildly sweet drink perfect for a cooling treat or a wholesome snack.


Ingredients

For Cooking Mung Beans

  • 1 cup mung beans
  • 1.5 L water
  • ½ cup rock sugar
  • 1/8 cup sugar
  • 1 teaspoon lemon juice (approximate, for squeezing)

For Blending and Serving

  • 2 cups milk
  • 5 fresh mint leaves
  • Ice cubes for serving


Instructions

  1. Clean and Boil Mung Beans: Rinse the mung beans thoroughly, discarding any damaged ones. Place them in a pot and cover with water 2-3 cm above the beans. Bring to a boil, then simmer for 3-4 minutes.
  2. Cool Beans: Drain the beans and rinse under cold water to cool them completely.
  3. Simmer with Water and Lemon Juice: Return the beans to the pot, add 1/3 of the total water and squeeze in some lemon juice. Cook for 8 minutes, stirring occasionally and covering with a lid to prevent sticking.
  4. Add More Water Gradually: Add another 1/3 of the water, continue cooking for 8 more minutes with stirring and covered, ensuring beans don’t stick.
  5. Add Remaining Water and Sugar: Pour in the remaining water and both the rock sugar and sugar. Cook for another 3-4 minutes. Optionally, slightly mash the beans while cooking if you prefer a broken texture.
  6. Blend with Milk and Mint: Strain about 1 cup of mung bean soup slightly, then blend it with 2 cups of milk, fresh mint leaves, and the sugar until smooth.
  7. Serve: Pour about 2 tablespoons of mung bean soup in the bottom of serving glasses, then pour the blended mung bean milk on top. Serve chilled with ice cubes if desired.

  • Soaking mung beans before cooking can reduce cooking time, but here the beans are boiled directly.
